Ross Isaac Shrimp Cocktail
- Shrimp
- 1 lb raw shrimp, deveined and peeled
- Juice of 1 lime
- 1 tsp sesame oil
- fresh ground salt & pepper to taste
- Cocktail Sauce
- 1/2 cup mayonnaise
- 1 tsp sambal, siracha, or chili paste with garlic
- 2-3 TBSP Thai sweet chili sauce
- 1-2 tsp oyster sauce
- Juice of 1/2 lime
- Shrimp
- Marinate shrimp in lime juice, sesame oil, and salt & pepper for about 1 hour.
- Grill or broil shrimp until barely done (a few minutes on each side.)
- Remove to a platter and allow to cool at room temperature (the shrimp will finish cooking as they cool.)
- Drizzle with additional lime juice, to taste, as shrimp are cooling.
- Cocktail Sauce
- Combine all ingredients, adjusting all ingredients to taste.
- To Serve:
- Put cocktail sauce in a small dish in the center of a plate. Surround with grilled shrimp. Garnish with lime wedges.
