Fruit Cake *
- 1/4 lb. pineapple
- 1/4 lb. cherries (red or green)
- 1/2 lb. figs
- 1/4 lb. citron
- 8 oz. box dates
- 3 oz. pecan nuts
- 1 lb. English walnuts
- 1 small can orange juice
- 3/4 lb. butter
- 1/2 lb. brown sugar
- 1 box seeded raisins
- 1 box currants
- 4 eggs
- 2 c. flour
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- Beat up eggs.
- Add brown sugar and flour.
- Add the other ingredients.
- Add the orange juice a little at a time to keep it soft enough to mix well.
- Cook in round pan with spout.
- Grease pan good.
- Put wax paper in the pan and grease the paper good. Wrap good and put in pressure cooker.
- Steam for 20 minutes, then cook for 50 minutes at 10 pounds of pressure.
- Uncover and put in oven for 15 to 20 minutes at 300u0b0 to 350u0b0.
