Ice Cream Cookies
- 1 pint vanilla ice cream softened
- 1 pound butter softened
- 4 cups flour
- 1 jar "Bakers" cherry filling
- (or any flavor you like)
- 2 pound bag confectioiners sugar
- Mix first 3 ingredients together (dough will be sticky). Shape into bread loaf and cut into 8, 1" slices and wrap each in plastic wrap. Refrigerate 2 -3 hours (or over night). Remove 1 at a time from frig. Generously spread counter and dough with confectioners sugar. Use rolling pin and roll into circle 10-12" wide. Cut into 12 pie slices. Place small amount of filling at wide end and roll into cressent. Place on ungreased cookie sheet. Bake 350 for 20 -25 minutes until lightly golden brown. Remove immediately from cookie sheet to cool. Serve sprinkled with confectioners sugar when ready to serve.
