Molasses Sugar Cookies
- 1 1/2 cups shortening
- 2/3 cup molasses
- 2 cups sugar
- 2 eggs
- 1/2 - 1 teaspoon ground cloves (1 teaspoon will
- be quite strong)
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 1 tablespoon plus 1 teaspoon baking soda
- 4 cups flour (can be 1/2 whole wheat pastry flour)
- extra sugar or vanilla sugar for rolling
- Melt the shortening over low heat and let cool. Add the molasses, sugar, and eggs, and beat well. Mix in the cloves, cinnamon, vanilla, salt and baking soda. Mix in the flour. Chill for 60-90 minutes. (Dough will not get really firm.) Roll into 1 inch balls, roll the balls in the sugar, and bake at 350 degrees for 8-10 minutes.
