Mickey'S Fresca Roma
- 2 pounds ripe fresh plum tomatoes
- 1 small red onion
- 6 pitted green olives
- 1 large clove garlic
- 1/3 cup chopped fresh parsley
- 2 tablespoons finely shredded fresh basil or 3/4 teaspoon dried basil, crumbled
- 2 teaspoons drained capers
- 1/2 teaspoon paprika
- 1/4 teaspoon dried oregano, crumbled
- 1 tablespoon red wine vinegar
- 1/2 cup olive oil
- juice from 1 fresh lemon
- 1 pound uncooked spaghetti
- 1. chop all ingredients to a small consistency combine all of the ingredients and let sit for at least 4 hours
- 2. cook the pasta just before serving the meal
- 3. drain the pasta and combine instantly
- 4. enjoy
