Balsamic Grilled Flank Steak
- Equal parts balsamic vinegar and olive oil, enough marinade to cover steak
- 1 lb. flank steak
- 2 cloves minced garlic
- 2 cups baby arugula
- 2 cups assorted cherry tomatoes
- 1 loaf of rustic bread, sliced
- Some good olive oil for bread
- Parmigiano-reggiano cheese, shaved
- 1) Mix garlic with balsamic and olive oil. Cover steak and marinade at least 15 minutes.
- 2) Heat grill for steak and broiler for bread.
- 3)Brush bread with good olive oil and halve cherry tomatoes.
- 4) Pat off excess marinade on the meat with a paper towel. Salt and pepper the meat. Grill the steak medium rare.
- 5) Toast the bread. Place 2 slices on each plate. Top with steak, then arugula. Put cheese on top and scatter tomatoes. Drizzle oil over top, salt and pepper.
