Apple Upside-Down Cake
- 6 Tbsp. butter
- 1/2 c. brown sugar
- 2 Tbsp. chopped pecans
- 2 apples, peeled, cored and cut into 1/16ths
- 1 1/3 c. sugar
- 6 Tbsp. butter
- 1 Tbsp. molasses
- 2 eggs (room temperature)
- 1 tsp. vanilla extract
- 1 Tbsp. applesauce
- 1/2 tsp. allspice
- 1/2 tsp. ginger
- 3/4 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 2/3 c. flour
- 3/4 tsp. salt
- 3/4 tsp. baking powder
- 3/4 tsp. baking soda
- 2/3 c. buttermilk (room temperature)
- Melt the 6 tablespoons butter over low heat in a cake pan. Stir in the 1/2 cup brown sugar until smooth.
- Remove from heat and sprinkle the nuts evenly into the pan.
- Place apples in the pan in a circular pattern, covering bottom of the pan completely. Set aside.
