Fruit Tart From Marsee Baking Co.
- 2 c plus 1 T flour divided
- 1/2 c gran sugar
- 1/4 tsp salt
- 1/8 tsp baking powder
- 1 1/2 c butter divided (3 sticks)
- 2 eggs divided
- 2 yolks divided
- 1 tsp vanlla
- 1 c finely ground almonds
- 3/4 c powdered sugar
- Mix together 2 c flour,sugar,salt, and b powder then add 1 c butter and mix till butter is incorporated. Mix together 1 egg, 1 yolk, and vanilla then add to flour mixture until a dough forms.Knead for 1 min then divide into two.
- Cream together remaining 1/2 c butter, almonds, powdered sugar and remaining 1 T flour till light and fluffy. Add the egg yolk and the remaining egg and beat in. Add the cooled pastry cream in three parts blending well after ea addition. This makes the almond cream.
- Preheat oven to 375. Roll out pastry to fit into 8" tart. Divide the almond cream and spread evenly. Bake 25-35 min till golden brown and set. Cool then arrange fresh fruit in circles and brush w melted apricot jam
