Asian Orange-Soy Wingettes
- 3-4 pounds chicken wingettes (wings cut in half, tips removed)
- 1/2 C good quality orange marmalade
- 1T rice vinegar
- 2T soy sauce
- 2 large garli cloves minced
- 1 T minced fresh ginger root
- 1 T fresh lime juice
- 1/4C minced scallions
- 1/2 t Chinese chili sauce or other hot sauce
- Olive oil spray
- Toasted black & white sesame seeds
- Combine all marinade ingredients and plour over the wings in a large bowl. Toss by hand to ensure they're all completely coated. TYransfer to a 1 gallon zip-loc bag and lie plat in lower part pf frige overnioght until ready to bake. Turn back over a few times to redistribute marinade.
- Preheat oven to 425. Line a rimmed baking sheet with foil to make clean-up easier, spray with olive oil spray, and arrange wings skin side up in one layer. Transfer the remaining marinade from the bad into a small saucepan and quickly reduce it down a bit. Bake the wings for 50 minutes, brushing with the marinade a few times, and turining over twice so all sides get browned.
- Lighly sprinkle with sesame seeds and transfer to serving platter or bowl.
