Loretta'S Chicken Soup And Salad
- Chicken soup
- 5 lbs whole chicken , cut up
- 2 tbs salt to taste
- 2 tsp pepper to taste
- 4 stalk celery sliced
- 5 carrots, diced
- 2 pkgs Lipton onion soup mix
- 10 whole peppercorns
- 10 whole allspice
- 2 tbs fresh parsley
- Chicken salad
- 1 tsp salt to taste
- 1/2 tsp pepper to taste
- 1/2 tsp celery seed to taste
- 3 stalk celery, diced
- 1/4 cup chopped onion
- Wash chicken thoroughly.
- Put in a large soup pot, cover with water. Heat to almost boiling. Skim off the scum, then add the rest of the ingredients and cook on medium heat for 1 hour
- Remove meat and strip the meat from the bones, discard the skin and bones. Cut the dark meat into bite sized pieces and return to the pot. Bring to a simmer.
- Serve soup with your favorite noodles.
- Chicken salad
- Take the white meat and dice it. Add salt, pepper and celery seed. add diced celery and chopped onion. Stir in mayonnaise, mix thoroughly.
- Serve on Kaiser rolls.
