Chicken Ferninand
- 4 chicken breasts (boneless and skinless)
- 4 slices bacon
- 4 oz. crabmeat (backfin)
- 4 oz. snow crabmeat
- 3 slices whole wheat bread
- 1/4 c. mayonnaise
- 1 tsp. lemon pepper seasoning
- 2 tsp. Worcestershire sauce
- 1 tsp. Tabasco sauce
- 1/2 green pepper
- 1/2 onion
- salt and pepper to taste
- 1 oz. flour
- 1 oz. margarine
- 1 c. milk
- 1/2 c. Swiss cheese
- 1 c. cream
- 2 oz. chicken base
- 2 oz. dry sherry
- salt and pepper to taste
- Prepare crabmeat filling as follows:
- In a food processor, chop green pepper, onion and bread.
- Toss with crabmeats in a mixing bowl.
- Add mayonnaise, lemon pepper, Worcestershire sauce, Tabasco, salt and pepper.
- Mix well and roll mixture into 4 equal balls.
- Set aside.
