Ham In Topcoat
- 1 cup sourdough starter*
- 1 cup warm (90 degrees) water
- 6 cups unbleached flour
- 1 package Red Star yeast
- 1 tablespoon salt
- *2 days before: 1 cup warm water,1 package yeast, 2 cups flour. Mix an set a room temp. for 48 hrs. or so
- One trimmed 4 or 5 lb. ham
- Mix sourdough ingredients and let stand at room temp. 'til it rises to twice volume.(1-2 hrs)
- Punch down, let rise again. When risen, roll out on floured surface to about 1/4 inch and perhaps 16/18 inches diameter. Wrap ham in dough. Sealing all
- borders with egg and 1 tbsp. water beaten together. Paint rest of egg/water mix on all dough surfaces. Flick dried dill weed over surface. flick 1 tsp. sea salt and 2 tsp. dried mustard over surface. Bake 85 minutes in 325 oven. Turn pan 1/4 turn each 20 minutes.
