Ham In Topcoat

  1. Mix sourdough ingredients and let stand at room temp. 'til it rises to twice volume.(1-2 hrs)
  2. Punch down, let rise again. When risen, roll out on floured surface to about 1/4 inch and perhaps 16/18 inches diameter. Wrap ham in dough. Sealing all
  3. borders with egg and 1 tbsp. water beaten together. Paint rest of egg/water mix on all dough surfaces. Flick dried dill weed over surface. flick 1 tsp. sea salt and 2 tsp. dried mustard over surface. Bake 85 minutes in 325 oven. Turn pan 1/4 turn each 20 minutes.
