Chicken Creole
- vegetable cooking spray
- 1 c. thinly sliced onion
- 1 c. chopped celery with leaves
- 1 c. diced green pepper
- 3 cloves garlic, minced
- 2 c. sliced fresh mushrooms
- 2 c. diced uncooked chicken
- 1 (15 1/2 oz.) can of no-salt added tomatoes
- 1/2 c. Chablis or other dry white wine
- 1/4 to 1/2 tsp. crushed red pepper flakes
- 1/4 tsp. pepper
- 1 bay leaf
- 2 c. hot cooked rice, cooked without salt or fat
- 2 Tbsp. chopped parsley
- Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
- Add onion and next 3 ingredients. Saute until crisp-tender.
- Add mushrooms and cook about 3 minutes, stirring occasionally.
- Add chicken and next 5 ingredients; cook 25 minutes.
- Serve over rice; sprinkle with parsley.
