Chicken Creole

  1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  2. Add onion and next 3 ingredients. Saute until crisp-tender.
  3. Add mushrooms and cook about 3 minutes, stirring occasionally.
  4. Add chicken and next 5 ingredients; cook 25 minutes.
  5. Serve over rice; sprinkle with parsley.
