Texas Lemon Pie
- CRUST:
- 1 cup flour
- 1/2 cup shortening
- dash salt
- milk enough to form ball
- FILLING:
- 1 cup sugar
- 3 heaping TBL flour
- 3 eggs, separated - yolk beaten
- 2 cups milk
- 1/4 cup fresh lemon juice
- 1/4 tsp grated lemon rind
- 1/2 stick margarine
- 2 drops yellow food coloring
- MERINGUE:
- 3 egg whites
- 6 TBL sugar
- CRUST: Mix flour, salt and shortening together. Add enough milk to form a ball. Roll out on floured board and bake at 350 for 20 minutes or until golden brown.
- FILLING: Mix the sugar and flour together in sauce pan. Gradually add milk, stirring constantly. Add lemon juice. Cook over medium heat until it begins to thicken. Add eggs and stir. When it has completely thickened, add lemon rind, food coloring and margarine. Remove from heat and pour into baked crust. Top with meringue and brown in 350 oven.
- MERINGUE: Beat eggs whites until fluffy. Gradually add sugar. Beat until stiff.
