Fruited Greek Salad

  1. Soak couscous in boiling water. Let steep for 7 minutes.
  2. Whisk dressing ingredients until emulsified.
  3. Toss with lettuce, endive, mandarin oranges, couscous, feta cheese, scallions and parsely.
  4. Serve immediately.
