Bangers & Mash
- 2 tbl olive oil, divided
- 1 1/2 lb pork sausages, mild, each pierced once with a fork
- 2 shallots, sliced
- 1 garlic clove, minced
- 3 tbl all-purpose flour
- 3 cups apple cider
- Mashed potatoes
- 1. Position a rack in the center of the oven & preheat to 350 degrees.
- 2. Heat 1 tbl of the oil in a large, ovenproof skillet over medium-high heat. Add the sausage & cook, turning occasionally, until browned, about 5 minutes. Transfer the sausages to a plate.
- 3. Add the remaining 1 tbl oil & the shallots to the skillet. Reduce the heat to medium-low. Cook, stirring often, until the shallots soften, about 2 minutes. Add the garlic & cook until it is fragrant, about 30 seconds. Sprinkle in the flour & stir well. Stir in the cider & bring to a simmer. Return the sausages to the skillet & cover.
- 4. Bake for 20 minutes. Uncover & bake until the gravy thickens & the sausages are cooked through, about 5 minutes.
- 5. To serve, spoon the mashed potatoes onto plates. Add the sausages & top with gravy.
