Easy Tasty Cheesy Mashed Potatoes
- 1 lb baby yukon gold potatoes
- 1 cup heavy cream
- 2 tablespoon butter
- 2 tablespoon olive oil
- 1 tablespoon rosemary
- 1 teaspoon basil
- 3 cloves garlic
- 1 cup parmesan cheese
- salt/pepper to taste
- chives (optional)
- Put the olive oil, garlic, and herbs in a small skillet over a low flame. While this is warming, cut potatoes into halves. Leave skins on and boil potatoes under tender about 8-10 minutes. Drain potatoes and put back in pot to allow steam to evaporate.
- Add olive oil mixture and butter and mash. Add salt and pepper to taste. Slowly add cream until desired consistency. Stir in the cheese last and serve warm! Chives can be used to garnish.
