Badminton Club Granola Bars
- 21/2 cups large flake oats
- 2 cups crisp brown rice
- 1 cup unsweetened coconut
- 1 cup dried fruits
- 1 cup seeds
- 1 cup nuts
- 1/2 cup butter
- 1/2 cup honey
- 1 cup demera (brown) sugar
- Combine all the dry ingregients in a large bowl.
- Grease a 9" X 13" pan.
- In a large saucepan, over medium heat, melt the butter. Add the brown sugar and honey. Heat the mixture until it begins to bubble, stirring as required to keep from burning.
- Add the dry ingredients to the melted butter mixture and stir well. Cook the mixture for 7 minutes until it is light golden, stirring constantly. Lower the heat if mixture is browning too quickly.
- Turn the mixture into the prepared pan. Use a spatula to spread the mixture evenly. Then, press it down firmly to compact.
- Cool completely before cutting into bars.
