Jumbo Gumbo Soup

  1. Heat butter in deep kettle.
  2. Add onion, green pepper and celery.
  3. Cook, stirring occasionally, about 5 minutes.
  4. Blend in flour.
  5. Gradually add reserved stock and cook (stirring occasionally) until mixture comes to a boil.
  6. Add remaining ingredients, except okra.
  7. Bring to boil.
  8. Reduce heat; simmer one hour.
  9. Add okra and reserved chicken pieces.
  10. Simmer until okra is hot.
