Jumbo Gumbo Soup
- 1 whole broiler-fryer chicken
- 6 c. water
- 1 medium onion, sliced
- 6 celery tops
- 1 1/2 tsp. Accent
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. margarine or butter
- 1 medium onion, chopped
- 1 bay leaf
- 3/4 tsp. dried leaf thyme
- 1 1/2 tsp. monosodium
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 green pepper, chopped
- 1 c. sliced celery
- 2 Tbsp. flour
- 2 (1 lb.) cans tomatoes
- 1 1/2 tsp. Worcestershire sauce
- 1 (10 oz.) pkg. frozen okra, thawed
- Heat butter in deep kettle.
- Add onion, green pepper and celery.
- Cook, stirring occasionally, about 5 minutes.
- Blend in flour.
- Gradually add reserved stock and cook (stirring occasionally) until mixture comes to a boil.
- Add remaining ingredients, except okra.
- Bring to boil.
- Reduce heat; simmer one hour.
- Add okra and reserved chicken pieces.
- Simmer until okra is hot.
