Diabetic Orange Whip Cheesecake
- 1 envelope plus 1 tsp. unflavored gelatin
- 1 c. skim milk
- 1 pt. small curd, low-fat cottage cheese
- 1 tsp. vanilla
- 1 tsp. orange extract
- 1 tsp. grated orange peel
- artificial sweetener to equal 1/3 c. sugar
- 1 large orange, divided into 8 sections and halved
- 3 large eggs, separated
- dash of salt
- Sprinkle gelatin over milk on top of double boiler.
- Beat egg yolks lightly and add to milk.
- Stir milk, egg yolks and gelatin in top of double boiler over boiling water for 5 minutes until gelatin dissolves and mixture thickens slightly.
- Remove from heat and cool to room temperature.
- Add cottage cheese, vanilla and orange extract.
- Pour into blender jar and blend until smooth. Pour into mixing bowl.
- Beat egg whites to soft peaks.
- Gradually beat in sweetener and beat to a soft meringue.
- Fold into cheese mixture.
- Coat bottom of 8-inch glass pie dish with nonstick spray.
- Pour mixture into pie dish. Chill until firm, at least 4 hours.
- Top with orange slices to serve.
- Makes 8 servings.
