Masterpiece Pecan Coffee Cake

  1. 1. Preheat oven to 350 and grease pan.
  2. Batter:
  3. 2.In a medium mising bowl add flour, sugar, baking powder, salt. Mix well
  4. 3.In a small mixing bowl crack and stir the egg well until the yolk and white are mixed well.
  5. 4. Add soy milk, oil and vanilla to the egg mixture. Stir again.
  6. 5. Add the wet ingredients to the dry ingredients and mix for 20 seconds. (Mixture will not be perfecty smooth)
  7. Mix in pecans
  8. Set aside batter
  9. Streusel:
  10. 1. Mix the brown sugar, flour, and unsalted butter. Crush together with a pastry blender until the butter is crumbled with the rest of the ingredients of the streusel.
  11. Pour the batter into a 9x5 loaf bread pan. Sprinkle streusel over the batter.
  12. Bake for 20-30 minutes until a toothpick comes out clean.
  13. Cool for 10 minutes before eating. Enjoy!
