Masterpiece Pecan Coffee Cake
- Batter:
- 1 3/4 cup Flour
- 1/2 cup White sugar
- 2 tsp Baking powder
- 1/8 tsp Salt
- 1 Egg
- 3/4 cup Vanilla soy milk
- 1/4 cup Cooking oil
- 1 tsp Vanilla exctract
- 1/2 cup Pecans
- Streusel:
- 2 tbsp All-Pourpose flour
- 2 tbsp Brown sugar
- 1/8 tsp Cinnamon
- 1 1/2 tbsp Un-salted Butter
- Utensils:
- 9x5 bread loaf pan
- 2 Small mixing bowls
- Medium mixing bowl
- Pastry blender
- 1. Preheat oven to 350 and grease pan.
- Batter:
- 2.In a medium mising bowl add flour, sugar, baking powder, salt. Mix well
- 3.In a small mixing bowl crack and stir the egg well until the yolk and white are mixed well.
- 4. Add soy milk, oil and vanilla to the egg mixture. Stir again.
- 5. Add the wet ingredients to the dry ingredients and mix for 20 seconds. (Mixture will not be perfecty smooth)
- Mix in pecans
- Set aside batter
- Streusel:
- 1. Mix the brown sugar, flour, and unsalted butter. Crush together with a pastry blender until the butter is crumbled with the rest of the ingredients of the streusel.
- Pour the batter into a 9x5 loaf bread pan. Sprinkle streusel over the batter.
- Bake for 20-30 minutes until a toothpick comes out clean.
- Cool for 10 minutes before eating. Enjoy!
