Choco-Dot Pumpkin Cake
- 2 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- 2 c. sugar
- 4 eggs
- 1 can pumpkin (2 c.)
- 1 c. vegetable oil
- 1 1/2 c. 40% bran flakes
- 1 (6 oz.) pkg. chocolate morsels
- 1 c. coarsely chopped nuts
- Sift together all dry ingredients.
- In large bowl, beat eggs until foamy.
- Add pumpkin, oil and bran flakes.
- Mix well.
- Add sifted dry ingredients, mixing only until combined.
- Stir in semi-sweet chocolate morsels and nuts.
- Spread evenly in a 10 x 4-inch ungreased tube pan.
- Bake at 350u0b0 for about 1 hour and 10 minutes.
- Cool completely before removing from pan.
- Drizzle with a confectioners sugar glaze, if desired.
