Megan'S Granola
- 1 1/2 cups wheat germ
- 1 1/2 cups oat bran
- 1 cup sunflower seeds
- 1 cup finely chopped amonds
- 1 cup finely chopped pecans
- 1 cup finely chopped walnuts
- 1 1/2 teaspoons salt
- 1/2 cup brown sugar (reduce or eliminate if sugar is an issue)
- 1/2 cup maple syrup
- 3/4 cup honey (less if you don't like overly sweet granola - jd)
- 1 cup vegetable oil (too much, use about 1/2 of this - jd)
- 1 tbsp cinnamon
- 1 tbsp vanilla extract
- 2 cups raisins and/or dried cranberries or other dried fruit
- Preheat oven to 325 F. Line two large baking sheets with parchment or aluminum foil
- Combine grains, seeds and nuts into a large bowl. Stir salt, sugar, syrup, honey, oil, cinnamon and vinilla in a saucepan. Bring to boil over medium heat, then pour over the dry ingredients and stir thoroughly to coat. Spread the mixture out onto the baking sheets
- Bake in preheated oven until crispy and toasted, about 20 minutes. Stir once or twice. Cool, then stir in the dried fruit before storing in an airtight container.
