Hamburger Casserole
- 2 lbs ground beef
- 1 onion, chopped
- 2 green bell peppers, chopped
- 1 batch ground beef seasoning mix
- 4 eggs, beaten
- 4 cups whole kernel corn (canned or frozen)
- 4 tomatoes sliced
- 2 cups crushed cornflakes (used on reheating day)
- 1 stick butter, melted (used on reheating day)
- Freezing Day
- 1- In a medium skillet over medium heat, brown ground beef, onion, and green peppers 7-10 minutes until ground beef is fully cooked. Drain. Stir in seasoning mix. Add eggs and mix well. Remove from heat.
- 2 - Prepare a 9" x 13" casserole dish for freezing or use an aluminum pan.
- 3- Layer the bottom of the casserole dish with 2 cups of corn. Add half the meat mixture on top of the corn, followed by a layer of sliced tomatoes. Repeat the layers.
- 4- Wrap well and freeze.
- Reheating Day
- 1- Defrost casserole in the refrigerator overnight. Top with crushed cornflakes, and pour melted butter over the top of the cornflakes.
- 2- Bate at 350 degrees for 45 minutes
