Summertime Medley
- 1 eggplant, diced
- 2 zuchinni, diced
- 6 fresh tomates, diced
- 4 onions, diced
- 2 red pepper, diced
- 1 tbsp mint
- 1 tin garbanzo beans
- 1 tbsp greek seasoning
- salt and pepper to taste
- 1 handful parsley chopped
- 1/2 handful parsley to garish.
- 3 cups uncooked brown rice.
- 1. put brown rice with
- 2. dice all vegetables.
- 3. in Teflon coasted pan, saute the onions first until golden, then add eggplant,salt, pepper, mint, parsley and greek seasonings and continue to cook until soft, then add the zuchinni and cook for another ten minutes.
- 4.add red peppers, and garbanzo beans and cook for another five minutes.
- 5. place cooked brown rice in large dish, spoon medley over and garnish with chopped fresh parlsey. Enjoy
