Karen'S Gazpacho
- 1/4 cup red wine vinegar
- 1/2 cup extra-virgin olive oil
- 1/4 tsp. hot pepper sauce
- 2 cups canned tometo sauce
- 1 clove garlic
- 4 large ripe tomatoes, peeled & seeded
- 1 small green pepper, seeded & cored
- 1 small red pepper, seeded & cored
- 1 small yellow onion
- 3 green onions
- 1 cucumber - peeled & seeded
- salt & pepper to taste
- Whisk together red wine vinegar, olive oil, hot pepper sauce, and canned tometo sauce in a mixing bowl.
- Combine vegetables in small batches in a blender, adding juice mixture gradually to keep blades from clogging.
- Puree.
- Once all vegetables have been pureed, add salt & pepper to taste.
- Cover & chill for at least 4 hrs. Taste and adjust seasoning as needed.
- Serve cold.
- Can add pieces of diced red pepper, cucumber & avocado if desired.
