Karen'S Gazpacho

  1. Whisk together red wine vinegar, olive oil, hot pepper sauce, and canned tometo sauce in a mixing bowl.
  2. Combine vegetables in small batches in a blender, adding juice mixture gradually to keep blades from clogging.
  3. Puree.
  4. Once all vegetables have been pureed, add salt & pepper to taste.
  5. Cover & chill for at least 4 hrs. Taste and adjust seasoning as needed.
  6. Serve cold.
  7. Can add pieces of diced red pepper, cucumber & avocado if desired.
