Linda & Nora'S Chicken And Rice

  1. Cut the chicken breasts into bite sized pieces.
  2. Saute the chicken breasts in olive oil until cooked through.
  3. While the chicken is cooking;
  4. Put the tomato sauce in a large sauce pot. Add about 4-5 cans water.
  5. Add the diced bell pepper and onion. Season with salt and pepper; cumin and garlic powder to taste.
  6. Opttional: Add the olives.
  7. Add chicken to the pot.
  8. Bring to a boil; then turn heat down and simmer for about 20 minutes.
  9. Serve over cooked white rice.
