Linda & Nora'S Chicken And Rice
- 1 to 1 1/2 pounds chicken breast, skinless and boneless.
- Tony Chacheres or Adobe seasoning
- 1 14-oz can Italian Tomato Sauce
- 1 bell papper, diced
- 1/2 onion, diced
- Salt and pepper, to taste.
- Cumin to taste.
- Garlic powder to taste.
- Cooked white rice.
- Optional: Spanish or Black Olives
- Cut the chicken breasts into bite sized pieces.
- Saute the chicken breasts in olive oil until cooked through.
- While the chicken is cooking;
- Put the tomato sauce in a large sauce pot. Add about 4-5 cans water.
- Add the diced bell pepper and onion. Season with salt and pepper; cumin and garlic powder to taste.
- Opttional: Add the olives.
- Add chicken to the pot.
- Bring to a boil; then turn heat down and simmer for about 20 minutes.
- Serve over cooked white rice.
