Grilled Chicken Pizza With Spinach And Portabella Mushrooms
- 1 pizza crust
- 3 oz. pizza sauce
- 1 chicken breast, grilled (about 4 oz.)
- 1 c. spinach, fresh, roughly chopped
- 1 large portabella mushroom, diced, stem and gills removed
- 1/2 red onion, diced
- 1/2 c. smoked provolone, shredded
- 2 tbsp. extra virgin olive oil
- salt and pepper to taste
- Preheat oven to 425. Spread pizza sauce on crust. Place olive oil in an 8 inch saute pan and place over medium-high heat. Saute mushrooms and onions until soft. Add spinach and cook until wilted. Season vegetables with salt and pepper. Spread sauteed vegetables over crust. Top with chicken and shredded provolone. Bake 8 - 10 minutes or until cheese is just beginning to brown.
