Sauteed Chicken With Warm Spices
- chicken cutlets
- 1/4 cup minced onion
- 4 tbsp peanut oil
- 1 cup chicken stock
- lime juice
- flour
- 1/2 tsp cayenne
- 1 tbsp minced fresh ginger
- 1/8 tsp nutmeg
- 1 tsp paprika
- 1/4 tsp ground cinnamon
- cilantro
- salt
- pepper
- Heat peanut oil in a large skillet. Shake salt and pepper on chicken cutlets, then dredge them in flour with cayenne. Saute the chicken, turning once, for about 6 minutes total. Remove from pan. Cook onion until soft. Add ginger, nutmeg, paprika, cinnamon, and chicken stock. Cook until reduced. Add chopped cilantro leaves and lime juice. Spoon the sauce over the chicken.
