Country Meat Loaf
- 2 Tbsp. salad oil
- 1 medium onion, chopped
- 1 celery stalk, chopped
- 3 slices white bread
- 2 lb. lean ground beef
- 1 medium carrot, shredded
- 1 1/2 tsp. salt
- 1/4 tsp. cracked pepper
- 1 egg
- 8 oz. can tomato sauce
- 1 Tbsp. brown sugar
- 1 Tbsp. cider vinegar
- 1 Tbsp. prepared mustard
- In 2-quart saucepan over medium heat, saute oil, onions and celery.
- Cook about 10 minutes, stirring occasionally with slotted spoon.
- In large bowl, tear bread slices.
- Add onion and celery mixture.
- Add ground beef, carrot, salt, pepper, egg and 1/2 can of tomato sauce.
- Stir thoroughly to mix.
- In 12 x 8-inch baking dish, shape ground beef mixture into 8 x 4-inch loaf; set aside.
