Honey-Spiced Chicken With Orange Sauce
- 2 Tbsp. vegetable oil
- 3 lb. chicken, cut up
- 2 medium onions, sliced
- 1 tsp. salt
- 1 tsp. paprika
- 1/4 tsp. pepper
- 1 c. orange juice
- 1/4 c. honey
- 2 Tbsp. lemon juice
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 3/4 c. pitted, ripe olives
- 1 Tbsp. cold water
- 2 Tbsp. cornstarch
- 1 orange, sliced up
- Heat oil in skillet until hot.
- Cook chicken over medium heat until brown on all sides, about 15 minutes.
- Place chicken in ungreased, oblong baking dish, 11 x 7 x 1 1/2-inch.
- Tip with onions.
- Sprinkle with salt, paprika and pepper.
- Mix orange juice, honey, lemon juice, ginger and nutmeg.
- Pour over chicken. Add olives.
- Cover and cook in a 350u0b0 oven until thickest pieces of chicken are done, 45 to 60 minutes.
