Greek Salad With Brown Rice

  1. Place the rice, tomatoes, olives, cucumber, feta, and scallions in a large salad bowl.
  2. In a small bowl whisk the oil, lemon juice, salt and freshly ground pepper. Pour the dressing over the salad and mix to combine. (The salad may be prepared in advance to this point. Cover and refrigerate for up to 6 hours.)
  3. Before serving, add the lettuce and toss to combine.
