Grandma'S Walnut Cookies
- 2 1/4 cups light brown sugar
- 7 ounces (7/8 cups) shortening
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 4 1/4 cups sifted all purpose flour
- 3 eggs, beaten
- 3/4 chopped walnuts
- 1 egg, lightly beaten with 1 tablespoon water for wash
- Sift flour with salt and baking soda.
- Cream shortening and brown sugar until light. Beat in 3 beaten eggs. Mix in flour mixture and nuts by hand.
- Chill dough for 1 - 2 hours, or overnight.
- Preheat oven to 375 degrees F.
- LIGHTLY grease cookie sheets.
- Divide dough into about four parts. On a lightly floured surface, using hands, roll one portion into log about 12 inches long, keeping the diameter as even as possible. Cut the dough into 12 pieces. Roll each piece into a small roll about the thickness of a finger. Place each roll onto cookie sheets about 2 inches apart. Lightly flatten with fingers to a thickness of about 1/4 inch.
- Use a pastry brush (or fingers, for the old-fashioned way) to wash the tops of the cookies with the egg beaten with water.
- Bake 12 - 15 minutes, until lightly browned. Remove to wire racks to cool.
- N.B. Cookies are crisp. The can be backed a slightly shorter time for a chewier cookies.
