Spinach Pie
- 9 to 10-inch pie crust, prebaked a little
- 24 oz. fresh spinach
- 6 slices turkey bacon or about 1/4 lb. sliced pepperoni
- 8 oz. fresh mushrooms
- 12 oz. Mozzarella, shredded
- 6 oz. Swiss cheese, shredded
- 6 slices bacon, uncooked (optional)
- Brush bottom of pie crust with egg white to prevent sogginess. Wash spinach, break into bite sized pieces.
- Fry bacon and break into pieces.
- Slice mushrooms.
- Layer ingredients into pie crust, beginning with spinach, then bacon or pepperoni, mushrooms, cheeses and top with uncooked bacon or more pepperoni.
- This will be very tall but it sinks as it bakes.
- To prevent spinach from falling off pie shell, wrap a long piece of foil, 35 inches long, around the pie plate, forming a circular wall.
- The wall will be as tall as the width of your foil, 12 inches.
- Bake at 350u0b0 for 45 minutes to 1 hour.
