Seafood Salad
- 1 lb. sea scallops
- 1 lb. cooked shrimp
- 1 lb. snow crabs
- 2 green peppers, julienned
- 2 red peppers, julienned
- 1 red onion, julienned
- 1 bunch cilantro, minced
- 1 bunch fresh dill, minced
- 2 lemons
- 1/2 gal. vinaigrette dressing
- 8 oz. white wine
- 8 oz. clam juice
- 1 gal. water
- 1 tsp. thyme
- Combine wine, clam juice, thyme and water; bring to a boil. Add scallops to boiling liquid; cook until scallops are firm. Drain scallops and cool.
- When scallops have cooled, mix with shrimp and crabmeat.
- Add peppers, onion, cilantro, dill, juice of 2 lemons and vinaigrette.
- Salt and pepper to taste.
- Chill for at least 1 hour.
- Serve cold.
- Serves 6 to 8 people.
