Chicken-Spinach-Mushroom Quiche
- 1 (9-inch) frozen pie crust
- 5 eggs
- 1 minced onion
- 1/2 c. diced bell pepper
- 4 drops Tabasco sauce
- 1 1/2 c. diced, cooked chicken
- 4 Tbsp. flour
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 c. whipping cream
- 1/4 c. diced celery
- 3 tsp. salt
- 1 (8 oz.) can mushrooms
- 2 c. shredded Cheddar cheese
- Place pie shell in Pyrex pie plate.
- Beat one egg and brush bottom of pie shell.
- Cook spinach as directed.
- Drain.
- Beat other 4 eggs; add milk, salt, Tabasco sauce, mushrooms, drained spinach, onions, celery and bell pepper.
- Toss together chicken, cheese and flour.
- Stir into egg mixture.
- Pour into pie crust. Bake in a preheated 400u0b0 oven on a cookie sheet for 20 to 25 minutes or until center puffs up slightly, or a knife inserted comes out clean.
- Cool for 5 minutes!!!!
