Fresh Fruit Pizza Cookie
- 20 oz package refrigerated cookie dough
- 8 oz package light cream cheese
- 1/3 c sugar
- 1 t vanilla extract
- 1/2 fresh pineapple
- 2 peeled and sliced kiwis
- 1 peeled and sliced banana
- 1/4 c raspberries
- 1/4 c apricot jam, melted
- Preheat oven to 350 degrees.
- 1. Press cookie dough into 14" pizza pan. Bake 12 - 15 minutes, until browned and puffed. Cool.
- 2. Beat cream cheese, sugar and vanilla until blended. Spread over cooled cookie.
- 3. Twist crown off pineapple. Cut pineapple in half lengthwise. Refrigerate 1/2 for another use. Cut other 1/2 into thin wedges.
- 4. Arrange pineapple around the outer edge of the cream cheese, Arrange kiwi inside pineapple, overlapping pineapple slightly. Continue with banana and raspberries in the center.
- 5. Brush with jam and serve.
