Savory Johnnycakes

  1. Melt butter in a frying pan over medium heat. Add the cayenne pepper (if using) and onion and gently cook 2 to 4 minutes, until onions are tender. Don't fry the onions or darken them. Remove from heat and allow to cool.
  2. In a large mixing bowl, combine the cornmeal, flour, baking powder, cayenne powder and salt. Add the onion mixture into the dry ingredients.
  3. In a small mixing bowl, beat the egg. Add the honey and milk and blend thoroughly.
  4. Add the liquid ingredients to the dry mix. Stir just enough to combine. Don't overmix.
  5. Use the frying pan used to cook the onions.
