Baked Red Pepper Dip
- 8 Red Bell Peppers cut into thin strips
- 1 small jar capers (rinsed & chopped)
- 1 can anchovies (rinsed & chopped)
- 2-3 cloves chopped garlic
- Olive oil
- Balsamic vinegar
- Salt & pepper
- Place above ingredients into roasting pan.
- Sprinkle w/good amount of olive oil and with balsamic vinegar
- Season w/salt & pepper.
- Bake at 350 for approx 1 hr, stirring peppers after 1/2 hr.
- (You want some caramelization, so cooking time can be flexible.)
- When peppers are very tender, remove from oven & place in an ample bowl.
- Cover till cool. At this point, I use two knives & with a scissoring motion, cut up the pepper mixture.
- Then add enough flavored breadcrumbs to absorb most of the oil. Place in a serving bowl with the croutons around.
