Baked Red Pepper Dip

  1. Place above ingredients into roasting pan.
  2. Sprinkle w/good amount of olive oil and with balsamic vinegar
  3. Season w/salt & pepper.
  4. Bake at 350 for approx 1 hr, stirring peppers after 1/2 hr.
  5. (You want some caramelization, so cooking time can be flexible.)
  6. When peppers are very tender, remove from oven & place in an ample bowl.
  7. Cover till cool. At this point, I use two knives & with a scissoring motion, cut up the pepper mixture.
  8. Then add enough flavored breadcrumbs to absorb most of the oil. Place in a serving bowl with the croutons around.
