Caramelized Onion Tart
- Crust:
- 1 1/2 c. all-purpose flour 1/4 teaspoon salt 7 tablespoons unsalted butter 4 tablespoons ice cold water (more if needed)
- Mix all together until dough consistency. Roll out to about 1/4 inch thickness and place in non-stick tart pan.
- Filling:
- 6 medium-sized onions, sliced 1/2 cup unsalted butter (I used less) 1/2 heavy cream 2 tablespoons balsamic vinegar Salt & pepper to taste A good size handful or chopped fresh thyme
- Preheat oven to 400oF. In large skillet over medium heat add butter and melt. When butter has melted add onions and let cook for 30 minutes, stirring once or twice. When onions have browned add the cream. Stir and allow to thicken. Once thickened, add balsamic vinegar, and salt and pepper to taste. Stir in the fresh thyme. Spread mixture onto crust in baking pan. Cook for 20-25 minutes. Allow to cool about 10 minutes before serving.
