Hot Spinach Artichoke Dip
- 1 16 oz pkg. frozen chopped spinach, thawed, drained, and squeezed dry
- 2 8 oz pkg cream cheese
- 1 cup mayo
- 1 1/2 cup shredded parmesean or asiago cheese
- 1/3 cup shredded jack cheese
- 3 green onions, chopped
- 2 garlic cloves, crushed
- 1 8 oz jar artichoke hearts, chopped
- zest from 1 lemon
- 1/4 tsp ground red pepper
- 2 small tomatoes, seeded and chopped
- Pre-heat oven to 350F
- Set aside 1/4 cup of parmesean and the tomatoes. Mix all other ingredients until well blended. Spread into a shallow baking dish. Bake about 20 min. or until bubbling and slightly browned on top. Remove from oven and garnish with reserved parmesean and tomatoes. Serve with plain tortilla chips or wheat crackers.
