Nj Shore Seafood Delight
- 1 lb lasagna noodles
- 1 - 2 lb lobster
- 1 lb sea scallops
- 1/4 lb butter
- 2 tbls extra virgin olive oil
- 1 cup sliced crimini mushrooms
- 2 cups heavy cream
- juice zest 1 orange
- 2 bunches scallions trimmed thinly sliced
- 2 tbls minced fresh dill
- 1 tbls minced fresh sage
- 1/2 cup diced fire roasted tomatoes.
- 1 cup finly grated romano cheese
- in a lg pot boiling salted water cook lobster 8 - 10 minutes,remove and cool.in same pot add lasagna noodles and cook 15 minutes.drain noodles and slice into 3/4 inch strips.in a lg frying pan melt butter add olive oil and cook scallops over medium heat 4 minutes per side. add mushrooms cook 3 minutes .add heavy cream orange juice zest, scallions dill,sage and tomatoes
- stir to combine.remove meat from claws and lobster tail and chop coarsely add to pan.
- stir in cheese. place noodles on platter and serve seafood over all.
