Pea Sprout Salad

  1. Pour boiling water over pea sprouts. Let stand 10 minutes then drain. Use scissors to cut to separate.
  2. Grill two pineapple slices 1/2 " to 3/4" thick. Remove from grill and cube.
  3. Cut mango into cubes.
  4. Cut avocado into cubes
  5. Thin slice shallots lengthwise
  6. Combine all of the above in a bowl and toss.
  7. Combine salad oil, sesame oil, vinegar, lime juice and pommagranate molasses and blend into dressing.
  8. Toss dressing, and peanuts into salad
  9. Sprinkle fried shallots on top
