Yummy Pepper Steak With Rice
- 3 c. hot cooked rice
- 1 lb. lean round steak
- 1 Tbsp. paprika
- 2 Tbsp. butter (or margarine)
- 2 cloves garlic, crushed
- 2 c. beef broth
- 1 c. sliced green onions and tops
- 2 green peppers
- 2 Tbsp. cornstarch
- 1/4 c. each water and soy sauce
- 2 large fresh tomatoes
- As
- the
- rice cooks, pound steak to 1/4-inch thickness. Cut into
- strips.
- Sprinkle meat with paprika.trown meat in butter; add garlic.
- Pour 2 cups broth over meat; add onions. Cover and let cook until meat is tender.
- Cut green peppers in strips.
- Cut 2
- large tomatoes in eighths.
- Add cornstarch to 1/4
- cup
- and 1/4
- cup
- of
- soy sauce.
- Dissolve and put into skillet to thicken.
- Add pepper and tomato pieces.
- Cook until pepper is tender (not
- falling apart).
- Spread over platter of rice. Garnish with chopped
- ground onion bits.
- Serve immediately.
