Ultimate Oatmeal Cookie
- 1 1/2 cups of flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup vegetable shortening
- 1 cup sugar
- 1 cup light brown sugar
- 2 eggs (large)
- 1 tsp vanilla extract
- 2 cups old fashioned oats
- 2 cups Rice Krispies
- 1 cup sweetened coconut flakes
- 1 bag (6 oz) semi-sweet chocolate chips
- 1. Preheat oven to 350 degrees
- 2. Place parchment paper on cookies sheets
- 3. In a bowl, blend flour, baking soda, baking powder and salt, set aside
- 4. In a mixer set to medium high beat the vegetable shortening, sugar and light brown sugar, mix for 3 minutes. Add eggs one at a time. Once the mix starts to blend together add in the vanilla extract.
- 5. Turn the mixer to low and add the flour mixture from the other bowl, mix for a few minutes until dough starts to form.
- 6. Turn mixer off.
- 7. Stir in the oats, Rice Krispies, coconut and chocolate chips.
- 8. Form balls with 2 tbsp of dough and place on baking sheet 2 inches apart.
- 9. Bake at 350 degrees for 10 min.
- 10. Consume :)
