Truro Clam Pizza
- Clam Sauce from Linguine w/clams recipe w/4 C of ground clams - keep warm
- Fresh Pizza Dough - enough for two 16' square pizzas
- Corn Meal - 1/4 C
- Carmellized Onions - 2 or 3 large - also keep warm
- Basil leaves - 1/2 cup
- EVOO
- Fresh Mozzarella - 1 lb - in small pieces
- Fresh Parmesan - optional
- Large ripe tomatoes - 2 or 3 - thinly sliced and seeded
- Turn grill on high
- Roll out dough as thin as possible - I try to make two pizzas at a time - each half the size of my grill
- Coat board with thin layer of corn meal and lay dough on board
- Clean grill and coat w/EVOO
- Place dough on grill - turn grill down if dough bubbles quickly
- Grill on this side until bottom of dough is browning then remove onto board coated w/corn meal - cooked side up
- Add pizza toppings in order - sauce, basil leaves, onions, tomatoes, mozzarella & parmesan (optional)
- Oil grill again and place pizza back on.
- Cook until new bottom is brown.
- Serve immediately
