Turkey Soup
- 1 turkey carcass with dripping
- 6 box TJ turkey stock
- 1 box chix stock
- 3 lg onions 1/4d
- 6 unpeeled carrots 1/3
- 8 stalks unpeeled leafy celery 1/3d
- 3 leek green part
- 10 cloves garlic
- 1 tablespoon peppercorns
- 1 tablespoon better than boullion
- 1 bunch fresh dill
- 1 bunch fresh parsley
- 2 tablespoons salt
- 2 cups pearl barley
- 2 onions lg chp
- 6 diced carrots
- 7 diced celery
- 1 bag frozen corn 14 oz
- 1. put turkey carcass and next 12 ingredients in lg pot--add water to cover.
- 2. bring to boil--lower heat & simmer 3 hrs-uncovered--cover if needed
- 3. remove bones and veg--drain soup into another pot.
- 4. add remaining ingredients--cover pot--bring to boil
- 5. lower heat simmer covered till barley soft & vegs ckd-at least 45 min.
- 6. add frozen corn --ck 5 min
