Acapulco Casserole
- 1 lb. ground beef
- 1 c. chopped onion
- 1 1/2 Tbsp. Worcestershire sauce
- 1 tsp. chili powder
- 1 tsp. garlic salt
- 1 (15 oz.) can red kidney beans
- 1 (1 lb.) can cream-style corn
- 1 (8 oz.) can tomato sauce
- 6 corn tortillas
- 1/2 c. shredded Cheddar cheese
- Cook beef in a large skillet until brown, then drain off excess fat.
- Add remaining ingredients except tortillas and cheese.
- Cook, stirring, for 3 minutes.
- Place 1 tortilla in a round, 2-quart casserole.
- Top with 1 cup beef mixture.
- Repeat layers until all tortillas are used.
- Pour remaining beef mixture on top.
- Sprinkle with cheese.
- Bake, uncovered, in a preheated 350u0b0 oven for 30 minutes.
