Potato Cake
- 2 cups white sugar
- 4 teaspoons cocoa
- 3/4 cup butter or margarine
- 1 cup raisins
- 5 eggs (fold whites last)
- 2 cups all-purpose flour
- 1/2 cup buttermilk
- 1/2 cup nuts
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 1 cup hot mashed potatoes
- 1 teaspoon vanilla
- Cream butter and sugar; put in egg yolks, then mashed potatoes. Put spices, cocoa, and baking powder in flour.
- Put soda in buttermilk and alternate with dry ingredients.
- Add raisins and nuts.
- Fold in egg whites last.
- Grease and flour 13x9x2 inch pan. Bake at 375 degrees for 30 to 40 minutes.
- Cool.
- Frost with Caramel Frosting.
