Healthier Blueberry Muffins

  1. Preheat oven to 400. Grease 24 medium or 12 large muffin cups. I use paper muffin liners in my muffin pan, and spray with Pam.
  2. In large bowl, stir both flours, baking powder, baking soda, sugar and salt.
  3. In medium bowl,mix milk, eggs, applesauce and sour cream.
  4. Add wet mixture to dry ingredients and mix just til lightly moistened. Fold in blueberries. Spoon mixture evenly into greased muffin cups.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted in center of one muffin comes out clean. Cool on a cooling rack.
