Healthier Blueberry Muffins
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 4 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 cups sugar (can use only 1 cup)
- 1/2 tsp salt
- 1/2 cup low fat sour cream
- 1/2 cup applesauce
- 1 1/4 cups milk or buttermilk
- 2 eggs, lightly beaten
- 2 cups fresh or frozen blueberries
- Preheat oven to 400. Grease 24 medium or 12 large muffin cups. I use paper muffin liners in my muffin pan, and spray with Pam.
- In large bowl, stir both flours, baking powder, baking soda, sugar and salt.
- In medium bowl,mix milk, eggs, applesauce and sour cream.
- Add wet mixture to dry ingredients and mix just til lightly moistened. Fold in blueberries. Spoon mixture evenly into greased muffin cups.
- Bake for 25 to 30 minutes, or until a toothpick inserted in center of one muffin comes out clean. Cool on a cooling rack.
